Vacancy Description:

The prestigious, private members club 5 Hertford Street is providing an exclusive opportunity to train and work alongside industry leading chefs, utilising fresh seasonal ingredients to create delicious menus. They are currently looking for a passionate Trainee Chef de Partie to become a valued member of their team. You will be required to maintain a high quality of service and preparation throughout the kitchen whilst becoming confident of running your own section. You will need to have an understanding of the whole kitchen and have the ability to help all sections throughout any given day.

During your apprenticeship, you will be gaining substantial knowledge, skills and behaviours within the Chef de Partie Level 3 Apprenticeship standard. The main elements of Learning and Development include – Food Strategy and the use of Technology, Food Safety, Teamwork and people management, Business Management, Legislation & Risk Management and advance preparation, cooking and finishing. You will also be extending your Recipe book portfolio to include advanced and complex dishes.


What’s Involved/Duties:

The following are the core duties and responsibilities of this job role that you will be learning to become proficient in during your Apprenticeship, with you being able to confidently do all of these by the end. Occasionally you may be required to carry out other tasks dependant on factors such as workload and staffing levels:

  • Learn new techniques and skills to assist in running the kitchen, ensuring excellent food preparation standards and HACCP are maintained
  • Gain confidence in running a section of the kitchen
  • Ensuring orders are completed for the section, food is prepared and plated to an excellent consistent standard
  • Learn to run other sections of the Kitchen & support and monitor junior chefs
  • Accurate records and documentation
  • Ensure effective communication between all of the Chefs in the team and front of house team
  • Ensure food safety and allergy regulations are adhered to

Training Provided:

  • The successful candidate will be working towards the Level 3 Chef De Partie Apprenticeship.
  • Off the job training will be provided, where you will have the time to complete your portfolio work, attend off job training seminars and have allocated time for mentoring and being shadowed.
  • Candidates will need to have achieved maths and English at GCSE or equivalent Grades A-C (9-4) or Level 2 Functional Skills in maths and English before completing the Apprenticeship standard.


Expected Apprenticeship Duration:

  • 20 months.


Wage Details:

  • £24,000 per annum
  • From 48 hours per week.
  • Shift work. Sundays off, Daytime and evening shifts required
