Overview

Senior Production Chefs lead brigade teams or support the Head Chef in large establishments. They work in a variety of kitchen environments and are responsible for the day-to-day running of the kitchen service producing, monitoring and maintaining consistent food standards and quality across all stages of production and supply.
What will I learn?

During your Apprenticeship you will develop the skills and knowledge you need to supervise the production of centrally developed menu items and dishes and ensure dishes are adapted to meet the dietary requirements of customers. You will also learn how to complete, monitor and maintain food safety management systems including delivery, storage, cooking and service within the kitchen environment. The team leading skills you will gain include how to identify training needs, assist in the recruitment of staff, manage a budget, reduce costs and improve customer satisfaction.

How will I be assessed?

Throughout your Apprenticeship you will work closely with your HTP Training Consultant who will provide continuous assessment and feedback to ensure you successfully complete your apprenticeship standard. Once you have completed your formal training you will demonstrate what you have learnt through a multiple choice test, practical observation and professional discussion.
