Overview

A Commis Chef prepares food and carries out basic cooking tasks under the supervision of a more senior chef. The primary objective of the Commis Chef programme is to learn and understand how to carry out the basic functions in every section of the kitchen. This Apprenticeship will provide you with the opportunity to experience, consider and value each section with a view to choosing the area in which you feel most inspired. The learning journey of any chef will vary considerably from one individual to the next; however it is necessary for you to understand and have experience in the basics that this role provides in order to progress to any future senior chef role.
What will I learn during the programme?

During your Apprenticeship you will gain a wide range of knowledge and skills to enable you to be able to develop a range of craft preparation and cooking skills and techniques to prepare, produce and present dishes and menu items. Other areas you will learn about include food safety, how to maintain a hygienic kitchen environment, the costing of dishes, how to reduce wastage and work effectively with others to ensure high quality dishes are delivered on time.

How will I be assessed?

Throughout your Apprenticeship you will work closely with your HTP Training Consultant who will provide continuous assessment and feedback to ensure you successfully complete your Apprenticeship standard.  Once you have completed your formal training you will demonstrate what you have learnt through a multiple choice test, practical observation in the working environment and a professional discussion underpinned by a portfolio of evidence.
