Overview

A Senior Culinary Chef has a key role to play in the development of new recipes and products. During your working day you will interact with chef teams, restaurant teams, owners, senior management team, board members and suppliers. You will be carrying out research, ensuring responsible sourcing as well as developing and launching new products to meet the organisation's vision. Typical job titles include Executive Chef, Development Chef, Head Chef, Culinary Team Leader, Craft Chef and Chef Patron.
What will I learn during the programme?

During your Apprenticeship you will gain the knowledge and skills you need to maintain high culinary standards, oversee all food preparation and presentation to ensure quality and standards, order and maintain the inventory of food and supplies for developed dishes/menus, maintain compliance and due diligence documentation within the food safety management system to ensure a safe and hygienic kitchen, monitor food and equipment suppliers, develop recipes from scratch or brief, determine the best presentation/packaging of food, maintain or raise the profit margins on food and identify and coordinate training opportunities for staff.

How will I be assessed?

Throughout your programme you will work with your HTP Training Consultant who will provide continuous assessment and feedback to ensure you achieve your apprenticeship standard. Once you have completed training you will have the opportunity to demonstrate what you have learnt through a project, presentation and practical demonstration. This involves researching, designing and launching a product line or menu from concept to presentation. You will also participate in a practical assessment when you will demonstrate the range of the skills you have learnt during your apprenticeship by producing four dishes.

What can I do after this Apprenticeship?

On successful completion of this Apprenticeship you will have the option to progress onto an Operations Departmental Level 5 Apprenticeship.
